Roasted Broccolini Ingredients
- Broccolini
- Olive Oil
- Garlic
- Rock Salt

How To Make Roasted Broccolini
I gave up steaming broccolini a while ago, when I discovered how much roasting brings out the flavors and takes it to the next level. Steaming broccolini simply does it no justice!
- Preheat the oven to 190c/375f and line a baking tray.
- Wash the broccolini and remove any leaves
- Finely slice the garlic clove (the one I used was a fairly plump clove so 1 was enough)
- Coat the broccolini in the olive oil, scatter the sliced garlic and sprinkle the salt on.
- Place in the oven to roast for approximately 20 minutes. They should be cooked but still with a little al dente bite.
- Serve and enjoy

Tips, Serving Suggestions and Variations
- Make sure the broccolini is patted dry before placing on the baking tray.
- Spread the broccolini out on the baking tray so it is not too overcrowded.
- Make sure the slices of garlic land on the broccolini for peak flavor.
- Mix up the flavors by topping with sliced almonds, or when cooked, lemon juice and lemon zest.
- In the summer, I love making roast broccolini and asparagus, this is such a delicious combination, with the same garlic and salt seasoning.
- This also tastes delicious with some crumbled Vegan Feta Cheese or Vegan Parmesan on top.
- Serve this broccolini with our delicious Lentil Mushroom Bake, Buddha Bowl, Tempeh Teriyaki Bowl, Gluten Free Vodka Pasta or Vegan Jerk Chicken.

Storage and Reheating
- Store this broccolini in a clean, airtight container for up to 2 days in the refrigerator.
- You can reheat the broccolini in a pan, back in the oven, the air fryer or microwave.
- I would not recommend freezing this roasted broccolini, as freezing really changes the texture of it. It will become mushy and lose it's structure. It is definitely at it's best when it is cooked fresh!
