Growing up, we always had bread sauce as a condiment for Christmas dinner and I always looked forward to smothering my Brussels sprouts with it. However, we would always have it from the packet – which dont get me wrong, is still tasty.

My mother would start serving bread sauce each Sunday in December and I would look forward to it each week!

More recently, I was keen to try to make it from scratch – which turns out is easier than expected! I had never made a vegan sauce before with the same texture as bread sauce so was intrigued but also looking forward to cooking it from scratch.

It also worked out well that I had all of the ingredients at home. And it is a great way to use up some leftover bread!

What is bread sauce?

Bread sauce is a traditional English condiment, served with Christmas dinner. It is known as one of the great British classic sauces. Apparently it is a medieval times recipe, when bread-soaked sauces were very popular.

Using stale bread in sauces was a clever way of not wasting food. It is also an easy way of thickening up sauces.

Bread sauce traditionally goes with turkey or chicken. Luckily we have some alternative delicious vegan versions or a roast or chicken. Sauces were traditionally used to cover up the bland or less-than-perfect meat.

It is infused with beautiful herbs such as fresh thyme and bay leaves which really makes the sauce sing.

Bread Sauce Ingredients

I made this recipe before discovering some bread sauces traditionally use a clove studded onion to infuse the milk. I really love that this recipe has onion and garlic blended in the sauce because it really holds the flavour.

  • Fresh thyme
  • Bay leaf
  • Peppercorns

Allergy Friendly Bread Sauce Recipe

Although this particular recipe used soya milk and regular bread with gluten, it can certainly be adapted to make it more allergy friendly.

For example switch up the regular bread crumbs for gluten free bread crumbs. If you are avoiding soya – use an oat based milk or other plant based milk.

You can make this bread sauce without cream, it won’t make a huge difference. Some good dairy free cream options include soya cream and oat cream.

How to make bread sauce?

There are a few simple steps that will help you achieve this classic, delicious bread sauce from scratch. This recipe for bread sauce is fairly straight forward.

  1. Add the milk, butter, fresh thyme, bay leaf, peppercorns, garlic cloves and chopped onion to a sauce pan.
  2. Simmer this for approximately 20 minutes cooking time on a low heat
  3. Fetch out the stalks of the thyme, the bay leaf and peppercorns (if you can find them!)
  4. Leave the onions and garlic in the milk mix then blend together
  5. Add the breadcrumbs and dairy free cream to the mix and heat gently for a further 3 minutes or so.
  6. Add a little more milk if you prefer a thinner consistency. Add salt to taste.
  7. Sprinkle some nutmeg on top to serve.
  8. Serve and enjoy!

How to reheat bread sauce?

So this sauce thickens a little more once it has cooled down. It is best reheated in a sauce pan with a little more milk to unstick. Heat it gently until warmed through.

Ingredients

  • 500 mls soya milk
  • 50g vegan butter
  • 1 medium chopped white onion
  • 3 garlic cloves
  • 6 peppercorns
  • 1 bay leaf
  • 3-4 sprigs fresh thyme
  • 100g white breadcrumbs
  • 2 tbsp dairy free cream (I used oat cream)

Instructions

    1. Add the milk, butter, fresh thyme, bay leaf, peppercorns, garlic cloves and chopped onion to a sauce pan.
    2. Simmer this for approximately 20 minutes on a low heat
    3. Fetch out the stalks of the thyme, the bay leaf and peppercorns (if you can find them!) use a sieve over a jug if this makes it easier
    4. Leave the onions and garlic in the milk mix then blend together
    5. Add the breadcrumbs and dairy free cream to the mix and heat gently for a further 3 minutes or so.
    6. Add a little more milk if you prefer a thinner consistency. Add salt to taste.
    7. Serve and enjoy!

Notes

1. This recipe will stay fresh in the fridge for up to 3 days.

2. Best served fresh - to reheat you will need a little more milk to unstick the sauce as it becomes a little stodgy.
