Delicious Vegan Feta Cheese - Only 5 Minute Prep

This vegan feta cheese recipe is one of my favorite discoveries! What do you mean I can make a moreish vegan feta cheese using a few condiments and tofu? This is a nut free vegan cheese recipe, which is often hard to come by.

This vegan alternative to feta cheese is the perfect addition to a refreshing Vegan Greek Salad.

Why You Will Love This Recipe

This recipe is pulled together in a matter of minutes, simply whisk the marinade, press the tofu, chop and let it soak for a couple of hours. Bob is your uncle. Pop a few cubes on a salad, in a sandwich or just eat it straight out of the jar!

One thing I always missed when I turned vegan was a decent feta cheese. I cannot deal with the supermarket artificial cheeses which are strongly flavored of coconut oil or super salty. This recipe is very close to the regular version.

This vegan alternative to feta cheese is great for meal prepping at the beginning of the week.

How To Make Vegan Feta Cheese

  1. Press the extra firm tofu of any liquid and chop into small cubes
  2. Whisk together the marinade ingredients (all remaining ingredients) - save time by mixing it in the jar or tub you will marinade the vegan feta cheese in.
  3. Place the cubes in carefully and ensure it is fully covered in the marinade, close the jar then tip it up and down until all is covered
  4. Leave to marinade for at least 2 hours - the longer it is left the more it will soak up the vegan feta cheese flavors.

Keep the vegan feta cheese stored in a glass container in the refrigerator for up to 5 days, You can use the leftover marinade as a salad dressing as it is just delicious!

Ingredients

  • 200g Extra Firm Tofu
  • ¼ cup water
  • 1 tablespoon Olive Brine
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Olive Oil
  • 1 tablespoon Nutritional Yeast
  • 1 teaspoon White Miso Paste
  • 1 teaspoon Oregano
  • 1 tablespoon Apple Cider Vinegar
  • 2 teaspoon Celtic Salt
  • ½ teaspoon each of Garlic and Onion Powder

Instructions

  1. Press the extra firm tofu of any excess liquid and chop into small cubes
  2. Whisk together the marinade ingredients (all remaining ingredients) - save time by mixing it in the jar or tub you will marinade the vegan feta cheese in.
  3. Place the cubes in carefully and ensure it is fully covered in the marinade, close the jar then tip it up and down until all is covered - don't shake vigorosly as we want the cubes to stay intact
  4. Leave to marinade for at least 2 hours - the longer it is left the more it will soak up the vegan feta cheese flavors.

Notes

1) This should last up to a week when stored in the refrigerator
