Lentils may not seem like the most versatile of the legumes but we find that a little effort goes along way with our vegan lentil recipes.
Whether you use red lentils or brown lentils changes the taste, textures and more. Throw them in a food processor and you get taco meat. Throw them in some broth and you get a lovely red lentil soup. There are so many ways to adapt them for the best vegan/ vegetarian lentil recipes.
Lentil dishes are gluten free and packed with nutrition, most notably, protein and iron which is always great to pack in on a vegan diet. I especially love to use it instead of highly processed meat substitutes when possible, like in my vegan lentil taco salad. They also tend to be pretty affordable, especially when buying in bulk bins.
