What is Lotus Biscoff?

Lotus Biscoff is made by a Belgian biscuit bakery, founded in 1932.

The biscuit and spread is now well known worldwide, with it’s distinctive cinnamon/caramelised flavours and crunchy biscuit.

The biscuits go perfectly with a hot drink like tea or coffee, but the spread is next level in versatility.

Lotus Biscoff cookie spread can be used in baking or simple spreading on toast, or in these delicious lotus biscoff overnight oats.

I had no idea what Lotus Biscoff was up until a year or so ago.

Well when I say I think I discovered a pot of gold, I am being serious.

I have made this recipe over and over again and it simply doesn’t get old. 

Lotus Biscoff spread or biscoff cookie butter, as it is called in the US is so moreish and so delicious!

I literally have to try it in everything, from Biscoff Brownies to Biscoff Milkshakes.

However eating it straight out of the jar or swirled into my coffee is just as good!

Oats get such a bad reputation of being like this grey gruel – however oats are wonderfully versatile and can be transformed into pudding for breakfast.

These Biscoff overnight oats are genuinely so tasty and put the gruel reputation to bed for good!

What Lotus Biscoff Spread to Use?

I must admit, I am a fan of both smooth and crunchy Lotus Biscoff spread.

In this recipe I have used the smooth spread, however crunchy would actually be just as delicious.

It is all down to personal preference!

Why Should I make these Lotus Biscoff Overnight Oats?

They are quick to make and worth every bite.

Most of the ingredients are pantry essentials so hopefully you wont have to shop too many ingredients.

Lotus Biscoff is a panty essential, right? It has a firm place beside my jar of peanut butter!

Oats are nutritious and filling, giving a slow release of carbohydrates alongside protein.

They are filling and satisfying, and work great for meal prep and on the go.

Whether it is breakfast, brunch or post gym snack, they are easily transportable if made in an airtight jar.

You can make some easy substitutions should you not have all of the ingredients, such as a mashed banana instead of the yoghurt.

This recipe tastes almost like a dessert – and who doesn’t want dessert for breakfast?

In fact you could totally have this for dessert if you fancied, i know i have had overnight oats before.

Meal Prep Recipe

These vegan lotus overnight oats are the perfect meal preparation recipe.

You can bulk make the amount of pots you desire and have a special breakfast each morning for the week.

Lotus biscoff, creamy oats and crumbled biscuits? I’m sold.

You can even vary this lotus oatmeal with what you add to it, for instance I added extra vanilla soya yogurt on one day and another I added some chopped banana.

Mostly however, I enjoy the recipe as it is as it doesn’t necessarily need extra additions.

As a nurse, meal prepping to me is so important to get me through the week.

Hospital food just does not appeal to me and it costs so much money, so grabbing the healthy, affordable ingredients from my pantry is so worth it in more ways than one.

Are these Biscoff Overnight Oats healthy?

Oats are renowned for their health boosting properties, with slow release carbohydrates, low glycaemic index and high protein content.

Oatmeal or porridge is nutritious and keep us fuller for longer which is what we need at the start of the day.

However it should be noted these vegan overnight oats are slightly more indulgent with regards to sugar content, as Biscoff is certainly not sugar free!

But hey, we can enjoy these things as we please.

What kind of Oats to use for overnight oats?

The best kind of oats are rolled oats for sure, they soak up the liquid and give a more creamy texture.

Unfortunately whole oats give a more coarse finish.

What milk to use?

This recipe uses an oat milk. However if you are having trouble knowing what plant based milk is for you, then this article might be of help.

I am pretty sure any plant based milk such as coconut, almond or soya would work well.

How to make these biscoff overnight oats?

Ingredients – Makes 2 servings 

  • 1 cup rolled oats (can be gluten free if needed)
  • 3/4 cup plant based milk (I used oat milk) + 3 additional tsp oat milk
  • ¼ cup + 2 tbsp of coconut yoghurt
  • 2 tbsp biscoff
  • 1-2 crushed biscoff biscuits (optional)

Method

Notes

  1. Combine oats, 3/4 cup plant based milk and 1/4 cup coconut yoghurt altogether in a bowl and mix well.
  2. Separate mixture into 2 jars or containers of choice
  3. Layer a tbsp of coconut yoghurt over each pot
  4. Whisk the biscoff spread and 3 tsp of oat milk together to make it slightly more viscous
  5. Divide the whisked biscoff between the two pots, tipping the jar slightly to spread it out evenly on top
  6. Place in the fridge to set – these should be ready to eat within a couple of hours however the longer it is left the creamier the oats develop
  7. Crumble the crushed biscuits on top if desired
  8. Cover over with lid or cling film if leaving for a later time – then enjoy!

These should stay fresh in the refrigerator for up to 3 days.

You can use whatever plant based milk is preferred – this recipe uses oat milk however soya, almond or coconut would work just great also

Don’t worry if you do not have vegan yogurt, you could substitute this with a mashed banana instead and skip the yoghurt layer

I used coconut yoghurt as it is what I had. The thickness also works well when applying the final biscoff layer.

However I have made this with a vanilla soya yoghurt and it was so tasty!

Ingredients

  • 1 cup rolled oats (can be gluten free if needed)
  • 3/4 cup plant based milk (I used oat milk) + 3 tsp extra
  • ¼ cup + 2 tbsp of coconut yoghurt
  • 2 tbsp biscoff
  • 1-2 crushed biscoff biscuits (optional)

Instructions

  1. Place the rolled oats, dairy free milk, 1/4 cup coconut yoghurt, 1 tbsp lotus biscoff spread in a bowl and combine well
  2. Divide the oat mixture between two of your chosen containers/bowls/jars
  3. Spoon an extra tbsp of coconut yoghurt over each oat mixture
  4. Whisk the 2 tbsp biscoff spread with the remaining 3 tsp plant based milk until slightly more viscous
  5. Spread over both layers pf coconut yoghurt. You can pour on top and tip it around to the side to spread it evenly.
  6. Place in the fridge to develop its creamy texture for up 2 hours or overnight - you can divide the mixture now if you prefer and place it in two sealed containers such as mason jars
  7. If you wish, you can crumble a biscuit on top of the overnight oats or place a whole biscuit inside.
  8. Enjoy!
