Sweet Chilli Sauce Ingredients

This recipe for sweet chilli sauce uses pantry ingredients that are readily accessible. Even I was super impressed with the delicious, sweet tangy homemade sauce these pantry ingredients could make.

  • Red chillies - this recipe uses the bog standard red chilli peppers that are available all year round at the store. They offer a sharp but gentle heat, nothing too outrageous.
  • Garlic - garlic is one of the key aromatics in this sauce
  • Fresh ginger - the ginger provides its own gentle spice
  • White sugar - this is what makes it sweet and glossy
  • White vinegar - this provides enough tang and brings it all together
  • Cornflour - the cornflour slurry allows the sweet chilli sauce to thicken
  • Salt - to season
  • Water - to make the cornflour slurry

This sweet chilli sauce recipe is naturally vegan and gluten free.

How to make the Sweet Chilli Sauce Recipe

  1. Wash your chillis, mince the garlic and finely chop the fresh ginger.
  2. Roughly tear the chillies into smaller pieces and remove the seeds. It is ok to leave some seeds in (I did). If you like your sweet chilli sauce extra spicy, then leave in more seeds.
  3. Place the chillis, garlic and ginger into a blender and pulse until you have a chilli paste. It is ok that there are smaller bits of chilli, however you do not want massive lumps so you may want to pulse a few times and for a few minutes, depending on what blender you have.
  4. Now heat the 1 cup of white vinegar, 1 cup of white sugar and 1 teaspoon of salt in a pan. Place the chilli mixture in there.
  5. In a separate bowl, rehydrate the 2tsp of cornflour with the ⅓ cup water to form a paste
  6. Now place the cornflour slurry into the pan and stir through.
  7. Bring the mixture to the boil, then turn the heat right down to a simmer. Leave to simmer for approximately 40 minutes.
  8. Once cooled, place in a clean, sterilized jar and store in the refrigerator.

Top tip: Use culinary gloves when chopping and handling your chillies. No body likes getting spice in their eyes!

Substitutions/Options

  1. If you don't have enough chillies, or perhaps want a milder option, you can use red bell pepper to replace some of the chilli peppers
  2. If you prefer your sweet chilli sauce recipe to be hotter, then add in some thai red chillis to the mix. Or if you are brave, a scotch bonnet chilli.
  3. I opted for white vinegar, as this is what I had in my pantry (and it was the most affordable). However, equal quantities of red wine vinegar or rice vinegar would work well too.
  4. You can add a teaspoon of MSG to enhance the flavors, if that is your thing.
  5. You can also add a teaspoon of light soya sauce. I almost added some dark soya sauce but changed my mind at the last minute as I did not want to mess with the vibrant red color.

Notes

1) Make sure to wear culinary gloves when tearing or handling hot chilli peppers. I have made the mistake one too often where I have rubbed my eyes after handling chilli and I have instantly regretted not wearing gloves.

2) This recipe uses standard red chilli peppers. Please be aware if you use Thai red chillies, it will be a drastically different heat (hotter!) but maybe you would like that!
