It was only a matter of time before I had to try a vegan cottage cheese recipe. I played around with a few variations and opened for a simple version for this vegan cottage cheese. This dairy free cottage cheese is also nut free.

Regular cottage cheese is meant to taste quite bland with a slight tang to it. There are silky lumps or “curds” in cottage cheese which adds to the texture. 

I personally have never tried actual cottage cheese, but I was intrigued to try a vegan tofu version as a new option to top my toast.

  2. In another bowl, mix the vegan soya yogurt with lemon juice, salt and nutritional yeast
  3. Mix the yogurt with the tofu curds and stir well

This dairy free cottage cheese is mild, slightly tangy, easy to make and packed with protein. It is also very versatile in terms of what toppings you can put on it. I like to mix it up but trying sweet and savoury options.

This dairy-free cottage cheese is quick and easy to make. A perfect staple and toast topper, which is high in protein and low in fat. This vegan cottage cheese is texturally similar to regular cottage cheese, with tofu curds, a creamy soya yoghurt and just enough tang. Top this with your favourite toast toppers, such as roasted vegetables or crunchy cucumber.

Ingredients

  • 220g of firm tofu 
  • 1 cup soya Greek yogurt 
  • 1 tablespoon of nutritional yeast
  • 1 tablespoon of fresh lemon juice
  • 1 teaspoon of salt

Instructions

1. Store in a clean, air tight container for up to 5 days

2. This recipe has not been tested frozen, however I would not recommend it as it will make the tofu rubbery and the yogurt may separate

3. If you do not have soya yogurt, a bland coconut or oat yogurt may be a good replacement
